Such a classic recipe — my mom and I actually made one a few months ago and I remembered how much it brought me back…. If I have a can of opened coconut milk in the fridge I will use it instead of the juice to make it a pina colada upside down cake. Flaked coconut is nice in the cake too. Thanks so much Jill for noting that I put the juice in the wrong spot.
Good ideas for a pina colada version. My mom used to make this all the time, now my sister does. It is gooey and yummy. I had never made an upside down cake until recently, and glad I did. The kids loved it. Will let you know how it goes. That is a wonderful looking cake Tara! Have a great day!

Oh, does this bring back memories! My mom would make this as a special treat for my dad. Pineapple Upside Down cake is my all time, absolute favorite! The first time I had it was in a friends house. Next time I would try to incorporate more. You can do a mixed topping with the cherries and the nuts and then put crushed pineapple on top. I would like to try that too! This looks fabulous, Tara!
