About 3 weeks ago, however, I thought to make it for my Dad's birthday. I've never made a cheesecake and I have little experience with baking in general, but thought I'd give it a go. It turned out wonderful not just in looks but in taste too. I gave some of the extra to my Step-Dad, who is really picky about cheesecakes-- he's the one who makes them for holidays and if it's cheesecake that doesn't meet his approval he won't even eat it even if you are family-- but even he really liked it and ate the piece.

I did two things differently. I beat the batter at each stage at -least- five minutes longer than the directions say yes, my arm hurt and it was tiring but it's so fluffy and nice this way as I'd heard the longer you do that for, the nicer it turns out usually. The other thing is I filled up the large pan with water, but I didn't put the cheesecake in with it.

I wrapped up the springform pan anyway, but I just put the tow things in side by side--it gets the same results you want. Thanks for this recipe--it's awesome! What kind of baking dish can you fill with boiling water?
