As a vegan, I used to make my porridge oats with apple juice which gives it a beautiful, delicious, taste. I now tend to use almond milk but if I want that beautiful, fresh taste then I revert to apple juice. This was for cooking porridge, however I would guess it could also work for these pancakes.

A hand blander has removable beaters and an immersion blender has blades. You may want to update the recipe to clear up any confusion. In order for something to be a blender, it needs to have blades. So there is actually nothing confusing or misleading by her saying to use a hand blender. These pancakes look fabulous, Katie! Could you possibly post the Dr. Made these pancakes this morning. I used Kefir for my milk. I wondered how they would taste because my banana was almost black in over ripeness. Did not hurt the pancakes at all, in fact the banana flavor seems to disappear! Have you ever tried quinoa flakes?
